Cajun Tempeh Stir-Fry.
We created this recipe several years ago to have a quick, easy and flavorful meal!
Ingredients
sauce
1/2 cup olive oil
1/4 cup honey
2 Tbsp Hoisin sauce
2 cloves garlic, minced
4 tsp Cajun seasoning
Stir-fry
1 pkg tempeh cut into squares
can use any protein of choice; chicken, tofu, etc.
2 heads of broccoli, chopped
3 bell peppers, diced
1 can garbonzo beans (chickpeas)
Instructions
Began cooking rice according to packaging instructions
Mix sauce ingredients together
Place tempeh (or other protein) and beans in a skillet of medium high heat. Cook about 5 minutes, then add the broccoli.
Add sauce and stir to coat. Then simmer for about 10 minutes, stirring frequently.
Add peppers and continue to cook for 3 minutes
Either stir in rice and serve, or serve over rice
