Cajun Tempeh Stir-Fry.

We created this recipe several years ago to have a quick, easy and flavorful meal!

Ingredients

sauce

  • 1/2 cup olive oil

  • 1/4 cup honey

  • 2 Tbsp Hoisin sauce

  • 2 cloves garlic, minced

  • 4 tsp Cajun seasoning

Stir-fry

  • 1 pkg tempeh cut into squares

    • can use any protein of choice; chicken, tofu, etc.

  • 2 heads of broccoli, chopped

  • 3 bell peppers, diced

  • 1 can garbonzo beans (chickpeas)

Instructions

  • Began cooking rice according to packaging instructions

  • Mix sauce ingredients together

  • Place tempeh (or other protein) and beans in a skillet of medium high heat. Cook about 5 minutes, then add the broccoli.

  • Add sauce and stir to coat. Then simmer for about 10 minutes, stirring frequently.

  • Add peppers and continue to cook for 3 minutes

  • Either stir in rice and serve, or serve over rice

  • Enjoy!
